Here are all the maj7 chords I can think of which can be played in open position -

Bbmaj7: x10231

Bmaj7: x21302

Cmaj7: x32000

Dmaj7: xx0222

Ebmaj7 x65036 (not really in open position this one but it does use an open string!)

Emaj7: 022144 (can sometimes get away with 021100)

Fmaj7: 103210 or 133210

Gmaj7: 320002

I find vanilla maj7 chords a bit dull, maj7 add9 are more interesting, particularly with open strings.
