Notes 1 b3 5 = G Bb D, the 7th would be a b7 which is an F.

The barred E shape can be made easier by (as Jon hints) barring the top 3 strings with the 3rd finger. The 2nd finger gets the root on the 6th string while the underside of it mutes the 5th string. Saves you from barring all 6 with the first finger then using the 3rd to fret the 5th string 2 frets up.

You don't really need the fifth:

So, Gm7 can be a three note chord collection: G Bb F or G F Bb or F Bb G or Bb F G

Just can add a 9th
G Bb F A

Just add an 11th (Bit of a stretch)
G Bb F C

or using a minor triad with the 9th in the bass. G Bb D / A

or getting back to Gm7, using the second inversion of the minor triad with the 7th in the bass

Bb D G / F


It's great that there's a lot of permutations for any chord, you're never stuck for ideas.
