    hello and welcome to the forum.
    there is a pretty broad selection of bits and bobs right here that will help, and some good explanations about the different types and values of pots.   http://www.axesrus.co.uk/Electronics-s/1827.htm
    you'll probably be needing 500k for volume and tone if you are going for humbuckers.

    i'm no expert on this and a lot is down to personal taste. cts pots used to be the favourite but some folks are going for the more expensive bourns pots. i've just bought a pair of the alpha long shaft push pulls as they seemed to be the only available type in a long shaft. the cap debate is a long and painfull one and i'm not going there. i've used the orange drops which are good and i've just bought a bag of these cos they were cheap and don't really know if they are any good or not but i'll find out soon.  http://www.ebay.co.uk/itm/261395486673?_trksid=p2059210.m2749.l2649&ssPageName=STRK:MEBIDX:IT

    Gibson SG's have the front strap button mounted on the back so they can be easily flipped to play left handed.

    First of all, relearning how to play 'the wrong way round' must be very daunting - you have my respect for even attempting it.

    Regarding pots, you might want to have a read of this thread about anti-log pots. As a righty-turned-lefty you are in a pretty unique position - it will be interesting whether right-handed or left-handed pots feel 'right' now you've flipped over.

    The pots could be a real issue - do you use them a lot? And do you want them to turn 'right handed' or 'left handed'? This isn't a trivial question and depends on whether you normally *turn* the knob (in which case right-handed "clockwise for loud/bright" motion should be fine) or *roll* it with the side of your hand (in which case you will probably need left-handed "up for loud/bright" motion is better).

    If you don't use the pots much, it probably doesn't matter what you use, but if you do use tham and want "left handed motion", standard Log pots will not work correctly. You will need either "reverse Log" or at worst, Linear - which won't work as well, but at least not as badly as normal Log pots wired backwards.

    Whatever pots you choose, try to get large-diameter high-quality ones - they just work better. It's also worth replacing the jack with a Switchcraft, since far-east ones are universally crap. Don't waste money on caps though - anything of the right value will work just as well as any other, despite popular myth which says otherwise.

    Unfortunately it's going to be *very* difficult to find high-quality, reverse-taper pots with push-pull switches for the coil splitting.

    You will have more choices and better  contours on right handed pots 
    Choices of lefty pots are limited and almost non existent on push pull varieties
