Meshell Ndegeocello is fantastic, check out Plantation Lullabies or Peace Beyond Passion.
Massive fan of Joanna Bolme who played with Stephen Malkmus. Always simple, always plays the right thing. Eric A from Jane's Addiction for the same reasons.
Doug Wimbish from Tackhead has done some interesting pushing the envelope things, but also a really solid player.
