IMO, that is fine for putting a guitar together correctly. Unfortunately, most of what I think I know about the subject has been gleaned by trial and error - many of them my own.
Much of what guitar techs do involves detecting and correcting faults. It helps to have seen the things that can go wrong in order to diagnose those faults in future.
You will learn plenty in three days. Mainly, you will learn how much more there is to learn.
I'd love to take the Bailey residential course, also Doctor Roberts (AKA Robbie Gladwell) does similar courses in Suffolk...

Put a standard guitar together - the first course is simpler and cheaper.
Design your own guitar, understand more of the how it's put together and why, and learn a load of practical skills, then I'd suggest Mark's course might be better.
I did Mark's workshop course around my 40th, and I'd also have described myself as "inept at wood work and stuff" prior to the course. I really didn't think I'd be able to make a guitar - despite Mark assuring me that I would - and nor did anyone else who was aware of (my complete lack of) woodworking skills.
Mark was absolutely right.
As well as building a guitar on that first course, I also learned a huge amount about basic woodworkery, that I actually could do it, and gave me the confidence to do it and had a great week away with a bunch of like-minded guitar-playing learner-builders.
It seriously was a life changing experience.

Do the in-workshop course first, learn the skills and gain the confidence. Then use the online course (which is £199 for a year's access) to remind yourself of some of the details when you decide to build another, at home.

Still, I finished by lunchtime on the final day so managed to start the long drive home early, so there's enough buffer in the course.
It's a fantastic experience though and I would thoroughly recommend it.
