From what I've read the standard 8G ram is extremely capable...if its 16G then even better;-)

Yep - I went for upgraded ram but left the storage alone, kind of wish I’d spec’d up the internal storage.

Not much point I dont think...external SSD are far cheaper ...Im current setting up my Mac M1 256/8 with Studio One and a Quantum 2626.

Got to say, I’ve got 8gig ram and 512gig storage in a Airbook and I’m blown away but what it can handle. Gone are the days of adding as much ram as it’ll take.

You don't need as much system ram because the OS moves any non speed essential process from ram to the SSD to maximise the potential of the ram it has. As the SSD is very fast this isn't the problem it would be with a rotational drive.  
This does mean however that the SSD (which is soldered on the board) has to do a lot more write cycles than it would normally. As any SSD only has a finite amount of writes before it's buggered it's possible the 16Gb M1's will last longer than the 8Gb models but no one will know for a few years.
