Yesterday I attended a 'guitar set-up' course which was delivered by Jim Croisdale (jimsguitarworkshop.co.uk). It was a very interesting course and I learnt a great deal about how to go about setting-up my own guitar (acoustic) as well as electrics. I now feel a lot more confident about carrying out tasks on my own guitars beyond just the normal cleaning of the fretboard, polishing and changing strings. More indepth work would obviously require the expertise of a luthier.
I highly recommend Jim's course.

Really looking forward to it. I've recently bought a cheap guitar mainly for the purpose of learning how to do my own setups
I'm doing ok with YouTube vids and the dan Earlwine book but I learn best by being shown and getting to all questions.
