Make sure to stick a washing machine near the bar.
It's going to be a (very) small place focussing on great drinks, with great ingredients, as far away from a pub (and breweries) as you can get, although a country pub would be a nice place to semi-retire to one day.

Where are you looking at NQ?
Ancoats could be a gamble that might pay off. The Urban Splash area seems to be finally coming to life in a social sense.
Ancoats and Salford are options, but waiting to see how they develop over the next 12-18 months, I'm not afraid of moving into an overly saturated market as there is footfall, I know my product is unique and will bring people in and (most importantly) I'm looking to be turning money over from the outset so Ancoats and Salford might be ok, but it's gamble enough to open a bar (for me) rather than try to be a cog in an area's regeneration/development, but yeah I agree, with decent financial clout behind you, you could get a great space in Ancoats and absolutely kill it.
BeatStreet's (off Deansgate) an option too, but I'm sick of the whole "street food" schtick and I think it'll be on a downward curve by the time I'm set to go-I'd love to have had this summer there just knocking out Mojito's and Prosecco with a splash of purple in it at £6 a pop, would have cleaned up, I might see if I can pop a stall on there next summer doing that to help finance the main thing.
