even if they are a bit annoying I still try to be polite and try to avoid them dominating my time, cos if you're not careful they'll prevent you from being able to chat with anyone else..
a little excuse like 'I need a piss' / 'need to quickly pop backstage' followed by 'thanks for coming, it's been nice chatting' etc works
If someone asks to have a go on my guitar I tell em it's not my guitar, because it isn't. Loads of people like to have their photo taken with it though because of the Stella graphics ....locally the guitars way more famous than I am
@hotpickups .... that's the exact same ruse I use .... get excited about their song request, "What a great song, lets do that the next time we play here" .... been caught out a few times but not many
I have general policy in life of always asking politely twice, just in case they didn't hear the first time.

That usually works (plus being 6ft5 might help with the delivery of it).
In the early days of gigging we'd try and reason with enthusiastic (drunk) punters doing all of the above but now we just tend to completely ignore them and get on with the job in hand.
only once had someone ask to have a go on my guitar and i just said sorry mate, its not in standard tuning, left them to think about it
I think a lot of punters (and clients too sometimes) just don't appreciate the difference between a DJ and a musician.

You simply can't plan for those situations but now I always keep guitars in cases unless they are being played and always look for the nearest bottle/bar stool I can throw at someone in emergency!
