Most of the classics are monotimbral with no velocity sensing, and that wouldn't suit me.
Hmmm ... maybe a Matrix 12 ... but that means no ROMpler tones to quickly dial-up! If I really was stuck with just one synth, it would be the Fantom G.
In the proverbial "which one would you rescue from your burning home" scenario, it would be my Roland JD-990 with SR-JV80-04 Vintage Synth expansion board.
Fortunately, the JD lives in a trolley rack with several other synthesizer modules. Thus, it would be quicker to push the whole trolley than to unscrew one module.

Couldn't afford the bloody thing though!
Offset "(Emp) - a little heavy on the hyperbole."
Light enough to carry in a bag on one shoulder, good weighted keyboard with 88 keys, hex layer synth voices can do a surprising amount, sounds good and cuts through in a live mix, then there's huge flexibility in the splitting / layering options, plus the configurable controller sliders / knobs.
If I could only have one, and that could be 'anything' I'd probably buy something more expensive to be honest, but the bang for buck is really high with the px5s, and it covers a hell of a lot of ground. I think it will be regarded as an under the radar classic in future years

So many sliders.
