I don't think physical instruments (or at least interfaces) will ever die - partly because of the immediacy of an acoustic instrument in particular, but also because the restrictions that physical instruments impose on a composer can help with creativity.

Same as a guitar with a MIDI pickup is really hard to play like a piano (wrong voicings under the fingers) and a piano is really hard to play big strummy guitar chords. The interface influences the notes.
