I don't think it's particularly critical. It's not a "load-bearing" joint and it's a large surface area; I'd guess that any wood glue will do. I use Titebond, which is certainly a good choice but not necessary to buy if you already have something else lying around.
More important than the type of glue to use, in my view, is how you will clamp it while it's drying. Do you have clamps and bits of wood to use as cauls (i.e. scrap pieces between the clamp and the headstock/veneer)?
