Hooking up stereo pedals to a mixer — how?

When you’re using stereo pedals, how do you hook them up to a mixer? Take the H9, for instance. If I want to connect it to a mixer/USB interface, do I hook it up to two inputs? If so, how do I make those inputs behave as a stereo pair instead of two mono sources?

On the little Zoom R8, you can tell it to pair its inputs as stereo, but Don’t see this option on many other mixers? I’m planning on upgrading to a new mixer/interface, which is why I ask. Stereo in will be one of the most important things I need.

If the channels are separate, just pan them hard left and right.
