There is a fairly anonymous place called La Carboneria (it's an old coal yard) that does really authentic Flamenco - no polkadot dresses in sight and the dancers don't brylcreem their hair flat.  You can't really find it until they open the gates, but it's great !

Yes, probably the best place to go for the real deal
it's in the very middle of the city in a non descriptive location
