I havent tbh - I'd like to know what I'm asking for really before I order anything from anyone online - is it red tort ; vintage ; vintage red ? etc etc

Take a look on his web site where there are photos of each colour variation. That will narrow it down. Maybe Jack might then send you a sample if you can't get to his workshop.

That photo is over-exposed so that isn't showing the real colour of the guard. I suspect it's a bit darker/browner.

Its an Iphone pic of a mac screen - so probably not best example  - but its back drop on my mac and I cant find link to example and dont know to post the image online
