Make sure your company invests in a copy of Izotope RX7 Advanced. It's saved my skin many a time when it comes to voice over work. It can completely remove things like planes, air conditioning, crazy co-workers farting in the next room, etc.

Lots of other good advice in this thread that I wont repeat. But Octatonic knows his stuff.

Same here, I use RX more than any other single plugin these days.
