I've had Prime Video for a while and am only willing to recommend two things. The Boys and Rings of Power (if you're into Lord of the Rings).

I find Amazon better for films and documentaries than for TV. Lots of music docs too. It has some love sport if that's your thing (not really mine).

Saying that,
Fargo, Handmaid's Tale, Clarkson's Farm are all good.

Stuff is always leaving and arriving on Prime. Apart from the core of Amazon Originals +some others, the rest is a rotating cast of films which seem to depend on which other streaming services have outbid them for the next 3 months. Knives Out is currently on there, that's okay.

Marvelous Mrs Maisel is great if you'd prefer something lighter/funnier.

That's the only series I've ever really enjoyed on Amazon apart from when they had the old X Files series. Vikings was ok for a while but it gets very repetitive

If you like as sci-fi then The Expanse is awesome.
Also Fallout is, I believe, starting tomorrow. That has potential to be good. Possibly.
The Boys, as previously mentioned is great, as is Mrs Maisel.

Fargo series 1 and 5 are both very good, especially if you’ve seen the original film. They’re all stand alone series so you won’t miss anything if you leave some of them out. 

Reacher for a bit of mindless booyah Murican action hero entertainment. 

Vikings, especially the early series.
