Practicing writing and recording parts

I love watching Justin Ostrander’s videos where he tracks parts for songs, and would like to practice those skills ideally by adding guitar tracks to existing stems. What’s the best way to do that - are there libraries of stems from real songs? Or do things like RX8 do a good enough job of removing instruments to use that?
