Something I've tried to emulate but just can seem to get down.

You know when he somehow strikes a harmonic over the bridge pickup with his right hand then reaches across with his left to operate the whammy bar.

I just can't seem to get it down, any tips?

Its pinch harmonics. I find it quite hard unless my strings are new. I used to think that it was a normal harmonic over the pickups with his thumb 'touching' the strings, but its all about the pick. There are a few YouTube vids where Satch shows this technique. I'll see if I can search some out for you.
