I think you could do it in 2 weeks but probably have to miss out the Grand Canyon, unless you take a small plane tour from Vegas, which might be pricey. 

I reckon 2/3 days in SF, 2 days through Yosemite (spend at least 1 day/night here) and Death Valley, 3/4 days Vegas (including the Hoover Dam), 2 days through Mojave desert, 3/4 days LA (lots of time to do Hollywood, Venice Beach, a theme park and some shopping) then off to New York. 

That's without spending all your time in the car. Its a fairly packed itinery but the sights are so good and the "road trip" feel is great.

Go for it!
