What are the differences between a short and long plate tube, say a 12au7? And why would you choose one over the other?

As for the actual physics and electronics of it, I have no idea, but I have a Brimar longplate 12ax7 and it was a bit more lively sounding - not necessarily brighter, just felt like it had a few more harmonics packed in. It also went microphonic pretty fast.

You might get a better response if you referred to them as valves.
Which is what they are in Britain. ;)

They're just different-sounding. Valves are made by different manufacturers with all sorts of combinations of plate length, width and shape - there's really no rule about how they affect the sound. There is some evidence that longer plates might be a bit more microphonic, but that's about it.
