It depends what you do with the grease.  

If you use the grease for culinary purposes that is fine.

If you use it as a lube to masturbate to pictures of Cilla Black then it is wrong.

I am guessing that I can use it for cooking at a later stage.

I have been know to decant it and fry the bread in it. Deliciously bad for you.....but hey I did grill the bacon rather than fry it!!!

It'll keep longer if you strain the solids out. Also if you are using it as dripping the texture is better when strained and if you are using it to cook with you will get a burnt bitterness from the solids.

so always a good idea to filter out the solids.
