Please tell me if I am just being stupid and totally missing something here, but I was playing with my DD 500 the other day running into two amps and I couldn't get stereo panning...

It was as if I was just running the same signal to both amps and the delay came through both at the same time instead of one repeat on one amp and the next repeat on the other.

I had a look through all the settings and could only seem to split the dry signal and wet signal as a stereo image.

Ideally I want it so that the dry comes through both amps and the repeats come through one at a time.

Has anyone had this problem or know if its just a thing with the DD 500?

What you are describing is called 'ping pong' delay. I don't know the DD-500 but I'm sure one of the delay settings must do this.

Other ways of splitting a delay in stereo are dry / wet and in phase / reverse phase - still stereo, but obviously not the same as what you are after.
