Graphtech Nut for Gibson Les Paul

My newly bought (used) Les Paul seems to have a nylon / plastic nut and the G string slot is too low.
I plan to replace it with one of these, the idea being that I can just keep sanding off the inferior surface until the nut slots are okay...

Would that hat be a sound idea in practice? (Rather than just in theory)

Getting the old one out (if it's original) and cleaning up the slot is probably the harder job.
