No one who's got experience is going to say a 8K pickup sounds like an 8.6k pickup (which is approximately 5% more winds).
A 5% increase in output will be inaudible, however as a pickup is a resonant circuit, so it's possible that the resonant peak will have changed.
Higher output, drives an amp into distortion earlier, more compression, a fuller mid range and attenuated treble. I'd say 5% is probably about the minimal level where you'd notice the change, so it wouldn't be significant. But as I said before, noticeable.
Dumb but necessary question: Is the overwinding percentage an expression of the increase in d.c. resistance or of the number of turns around the bobbin?
