I agree with Comfortably Numb and AC/DC suggestions.

The second half of the Sweet Child o' Mine solo is full of pentatonic ideas you can recycle elsewhere. You don't need to play them as fast as Slash to sound good either.

All Right Now, mentioned a couple of times above is easy to play in terms of the notes. However, you could work on the phrasing and vibrato which is just as much a part of a solo as the note choice. Kossoff, Gilmour and Peter Green are all masters of phrasing in fairly simple solos.

None of these solos is actually easy. And I don't mean "the notes are easy but the feel is hard". I mean that after 15 years of teaching I've found all of these solos present technical hurdles for new players. Soloing is just tricky at first.

The BEST pentatonic solo for a newbie in my opinion is Gimme All Your Lovin' by ZZ Top. It's not purely pentatonic, but it's mostly within those five notes. There's nothing fast and no overly tricky rhythmic stuff.

Thin Lizzy is an excellent source for this kind of thing.
Try the solos from Southbound and Dancing In The Moonlight for starters.
In fact learning the whole of Live and Dangerous is a worthwhile project.

Agree, the two solos from Still In Love with You are excellent for pentatonics, bending, vibrato, hammer-ons  - all essential techniques covered.
