One option would be to buy something like an inexpensive used Les Paul Studio and customise it by fitting a set of Stratocaster pickups and control circuit . If you were prepared to settle for just neck and bridge pickups the whole modification should be reversible if carried out with care. Fitting a middle pickup would obviously require some routing.

After considering all of the options put forward the winner seems to be a 25th Anniversary PRS Swamp Ash Special for me. I can live without the neck rake but this appears to tick most of the other boxes and has a better neck profile for my smaller digits..

Difficult thing is going to be finding one...
