Its just a case of going a note at a time, build up a phrase, and make sure you’re playing it correctly against the original.
Knowing the key and the chords you’re playing over will narrow down the potential notes a lot.
If you have the song and a DAW you can loop specific sections until you’ve got it down. There’s probably specific software for this that will let you slow it down but I’m not familiar with it.
The more you do this the better you ear will get.
On YouTube, have you searched Country Guitar Chops (Ken Carlson)? You can sign up for free material from his website, plus he sells video lessons and song breakdowns. I have to say he's not 100% accurate (though neither am I!) but useful anyway. Plus he has a great porn star 'tache!
