The original will have been cut for a wound G string. The conversion on the guitar in the photograph makes sense for lighter gauge strings with a plain G.
finding a bridge is easy, or was before rosewood became an issue... but setting it up nicely takes a bit more work, like a nut really.

I like your idea of getting a couple. I’ve got Höfner bass bridges from China in the past and they were perfectly acceptable.
And definitely don't use a plain third... it's just Not Right .

Is there any way to reliably date this? Store said they thought '61 but there are no obvious markings to ID it and pots aren't available to view, maybe a dental mirror?
If there's no serial number visible, there may be a 'factory number', which will usually be on the inside of the body near the treble-side f-hole, often on the inside of the top so you will also need a mirror. The letter in it is the year, Q is 1961 but they go backwards!
The knobs would make it 1961 or earlier, but they could easily be replacements.
