My own experience is this: I stopped eating meat in the early 1980s when still young and idealistic, and afterwards often wondered if I hadn't switched then would still I make the same decision as an adult.
I finally found my answer couple of years ago. While on the way to the shop to buy my dinner I chanced upon a web page detailing the experiences of slaughterhouse workers, and the psychological damage it had had wrought on them. If I still ate meat I would stopped there and then, and gone home with a nut cutlet rather than a steak.
Good luck, hope it works out for you. The fact that you are asking these questions speaks for your character, so don't beat yourself too much if you backslide, just try to start over the next day.
